hushcocktailsAvantgarde cooking techniques made famous by Heston Blumenthal et al are slowly filtering through to the drinks world and Hush is the latest to experiment.  Their special menu takes the humble Daiquiri as a base cocktail and demonstrates the exciting potential of the cocktail with textural, flavour and theoretical elements.   For example, their version of a piña colada has a solidified creamy texture served with hydrocollised rum whilst their B58 is a take on the classic B52 shooter, albeit with an explosive finish!  Available until 31 October.  www.hush.co.uk
